01 / HAND-CUT RIDGES
Good grinding begins
on the inside.
The fine grooves inside are called kushime. Craftspeople cut them by hand using metal tools they make themselves.
Regularly sharpening those tools keeps the ridges keen. It is a small detail inside a familiar shape, made with better grinding in mind.
02 / SILICONE BASE
A steadier bowl.
A gentler touch on the table.
Sizes 4 through 10 are also available with a silicone base. It helps keep the mortar from slipping and reduces scratches on the table.
There is less need for a cloth underneath or another person to hold the bowl.

From a kitchen staple
to larger batches.
Available in reddish brown, in sizes 4 through 10 and larger sizes 11, 12, 13, 15 and 18, mainly for professional kitchens. Choose a standard or silicone base to suit the way you cook.
